Ingredients (Use Vegan!) 2 cups unbleached flour 2 teaspoons baking powder 1/2 teaspoon salt cinnamon, to taste, optional handful vegan chocolate or carob chips 1 cup raw sugar (turbinado; sucanat works too, but sucks up a lot of the moisture) 1/2 cup canola or vegetable oil 1 teaspoon vanilla 1/4 cup water Directions 1. Very important-make sure all ingredients are at room temperature. It will work if they’re not at room temp but it works much better if they are. Also while your oven is pre-heating put the cookie sheets you are going to use on top of the oven so they get preheated as well. Preheat oven to 350 degrees F. 2. In a large bowl, mix together flour, baking powder, salt, and cinnamon. Stir in chips. Make a well in the center and set aside. In a medium size bowl, add together sugar and oil; mix well. 3. Add the vanilla and then add the water; mix well. Add the wet to the well in the dry. Mix it well but be careful not to overwork it. Add more chips if you need to. 4. Spoon onto ungreased cookie sheets. Put them in the oven. Bake for 5 [...]

5 Earth Friendly Baking Tips! Buying organic, or at least local produce. Using your reusable shopping bags! Seventh Generation makes great recyclable paper towels. Or you can even use eco friendly towels by Skoy. You can use them over and over, and when they’re gross toss em, cause they’re biodegradable. Investing in a silicone baking mats are also great, they’re easier to clean and it protects the integrity of your cookie sheets to wash them less. While your on the silicone wagon, try silicone baking cups, great if the cupcakes aren’t traveling! Unbleached cupcake cups, not pretty to look at but if your worried about gifting cupcakes with these cups remember its a gift to mother earth too! Okay…it’s gross! But…..Compost unused ingredients: egg shells, apple cores, carrot skins. Composting fruit and veggie scraps is a great way to keep these items out of the land fill while making some beautiful soil!

Easter is great for cupcakes! There’s bunnies, carrots, baby chicks, and spring time flowers. Here’s some easy to make tips for Easter Cupcakes! Bunny ears are always a challenge. A great trick is using Brach’s Pastel Candy Corn above. Or split Oreo halves like these: Now that you’ve got bunnies you’ve gotta make some “carrots”! Use Orange Starbursts. Nuke them 10 seconds, cut in half and roll them into carrots. Just keep them thicker on one end and people will be able to tell. Use a tooth pick to open the thicker end of the carrot and stick cut up green jelly fruit strips, Twizzlers works great, for the stem. Use some Oreo’s from the rabbit ears recipe above and crush it and sprinkle on top for “dirt. Plunge carrots in and viola! And here an adorable tutorial of how to make candy flower cupcakes: And Baby Chicks are easy too! The guy on the left: Detailing is easier then it looks.
